A concentrated assemblage style of rosé, featuring 25% coteaux champenois (that she makes from her Verzy grand cru pinot noir and only when the pinot noir is exceptional) + 80% chardonnay from her vineyards in Vaudemange. 

See: Intense, electric, raspberry-red. Halo of white frothy mousse and fervent fizz.

Smell: Red and blue fruit notes of wildberries and a earthy whiff of sagebrush

Taste: Bold yet elegant with striking minerality. Berry-like and refreshing as hell. That punch of brilliant acidity balances the fresh fruit tones and equalizes the structured mid-weight palate. That juicy finish lingers and makes you salivate for another sip!

Pair: Sashimi grade tuna poké, juicy cheeseburger and crispy waffle fries, or pound cake with homemade whipped cream and berry coulis.

Celebrate: You’re headed to your mom and dad’s for a Sunday BBQ, and your brother has texted you no less than three times with the message “Don’t forget the bub.” You’re on top of it as usual. Champagne in hand, you arrive ready to dive into the perilous pleasures of family gossip.

For Mathilde Devarenne of Rochet-Bocart, Champagne is more than her life’s work; it’s her legacy. The family domaine was founded in 1956 by her grandparents Jacques Rochet and Claudette Bocart in Vaudemange, a small village at the southern border of Montagne de Reims. At eight years old, Mathilde began helping in the tank room, and soon she impressed her elders with her ability to discern between grapes grown in each of the family plots simply by tasting them. Mathilde assumed her role as head vigneron at Rochet-Bocart in 2015, she now tends grapes from the same land just as her uncle Michel did before her and as her grandparents did before him.  

Guided by the wealth of wisdom passed down through the generations, Mathilde maintains many of the domaine’s time-honored traditions, but she has also added some new techniques and personal touches that make the label authentically her own. From biodynamic methods in the vineyards to blocking malolactic fermentation in the production house, Mathilde’s efforts produce exquisite low-dosage cuvées that are a beautiful reflection of her skill and passion.

Select “pick up” during check out, and we’ll safely store your bubbles in our temperature-controlled cave until you can collect them. Once we notify you that your order is ready, pop by at your convenience to pick it up and enjoy a splash. Or, if you prefer, give us a call, and we’ll bring it to you curbside.

Our new compostable, insulated packaging keeps your Champagne safe from breakage and at a constant temperature from our cave to you. Even so, we monitor the weather where you are, and if we feel that extreme heat or cold may affect the quality of your bubbles, we’ll be in touch to offer you options.

  • Do you do tastings?

    Mais Oui!

    Join us every Saturday from 12pm to 5pm where we will have three cuvées chilled and ready for you.

    There is a tasting fee of 40$ for non-members (waived with the purchase of a bottle), and members taste for free! 

    *Reservations for groups of 5 or more appreciated.

  • Do I have to be a club member to shop bottles?

    No way José. All are welcome to purchase any of our delicious bubbles online or in person at the fatcork cave.

  • What do I do if my Champagne is corked?

    Damp, wet cardboard? That’s not on the tasting note! Cork taint is the worst, but all fatcork Champagnes use natural cork closures, so it does happen on the rare occasion. Please let us know, and will happily replace the bottle. Before you throw it away, snap a photo of the back label and we can refer to the code for reference. Email it to info@fatcork.com along with the order number.

  • Can I return or exchange my bottles?

    We aim to please. Call or email us, so we can talk about what happened and how we can make things right.
