And while delicious today, Réserve 4 Cépages has remarkable aging potential of up to 15 years.

The Barbichons have been growing grapes and making wine in the Aube since the late 19th century. But even in a subregion of Champagne known for defying convention, their family domaine, Champagne Robert Barbichon, still stands apart.

Fourth-generation vigneron Thomas Barbichon and his family are in charge now, cultivating the 9 hectares of biodynamic vineyards in the village of Gyé-sur-Seine that he inherited from his father, Robert. Each of Thomas’ cuvées reflects a razor-sharp focus and an identity driven by the vineyards’ limestone-rich Kimmeridgian soils. Champagne Robert Barbichon is also one of only a small number of domaines that uses pinot blanc. One of the seven grapes allowed by Champagne law, pinot blanc is rarely planted. In fact, to cultivate this uncommon grape, the domaine must have historical records that prove the varietal has been grown on their land over many generations. This rare but remarkably versatile grape adds a distinct lemon-citrus flavor that is quite different from what is imparted by chardonnay.

In the cellar, Thomas vinifies and ages the wine in stainless steel tanks and barrels, with a minimal use of new oak, a method that preserves the true expression of each grape. For both first and second fermentations, Thomas employs proprietary yeast strains that were developed by the family and passed down through the generations. Originally cultivated from native yeasts found in their vineyards, these unique strains produce pure cuvées that express the distinctive terroir of the Côte des Bar with clarity and precision.

Select “pick up” during check out, and we’ll safely store your bubbles in our temperature-controlled cave until you can collect them. Once we notify you that your order is ready, pop by at your convenience to pick it up and enjoy a splash. Or, if you prefer, give us a call, and we’ll bring it to you curbside.

Our new compostable, insulated packaging keeps your Champagne safe from breakage and at a constant temperature from our cave to you. Even so, we monitor the weather where you are, and if we feel that extreme heat or cold may affect the quality of your bubbles, we’ll be in touch to offer you options.

    Tastings are free for members and $50 for non-members. (We’ll waive the fee with the purchase of a bottle.)

    No reservations required but please call ahead if you’re coming with a larger group.

  • Do I have to be a club member to shop bottles?

    No way José. All are welcome to purchase any of our delicious bubbles online or in person at the fatcork cave.

  • What do I do if my Champagne is corked?

    Damp, wet cardboard? That’s not on the tasting note! Cork taint is the worst, but all fatcork Champagnes use natural cork closures, so it does happen on the rare occasion. Please let us know, and will happily replace the bottle. Before you throw it away, snap a photo of the back label and we can refer to the code for reference. Email it to info@fatcork.com along with the order number.

  • Can I return or exchange my bottles?

    We aim to please. Call or email us, so we can talk about what happened and how we can make things right.
