La Combe Bazin Saint-Romain 2022
This biodynamic 100% chardonnay is a beautifully dense and balanced still wine made with grapes from Burgundy’s La Combe Bazin lieu-dit, the oldest vineyard at Domaine Rougeot Père et Fils. At an altitude of 350 meters, the vines offer small yields of the highest quality fruit, and vigneron Pierre-Henri Rougeot handles them skillfully and with the utmost care — harvesting by hand, direct pneumatic pressing in whole, untrimmed bunches and cold settling for two days before alcoholic fermentation with native yeasts and malolactic fermentation in barrels. A long maturation in oak barrels for 18 months gives this stunner just a hint of oak to elevate its rich and layered complexity. Pierre-Henri bottles it without additional sulfites, unfined and unfiltered to retain its exquisite texture and depth.

Tasting room is open Monday-Thursday 10-6, Friday 10-7, Saturday 11-7, Sunday 11-6Tastings are free for members and $50 for non-members. (We’ll waive the fee with the purchase of a bottle.)

Do I have to be a club member to shop bottles?
No way José. All are welcome to purchase any of our delicious bubbles online or in person at the fatcork cave.

What do I do if my Champagne is corked?
Damp, wet cardboard? That’s not on the tasting note! Cork taint is the worst, but all fatcork Champagnes use natural cork closures, so it does happen on the rare occasion. Please let us know, and will happily replace the bottle. Before you throw it away, snap a photo of the back label and we can refer to the code for reference. Email it to info@fatcork.com along with the order number.
