TASTE: Unctuous body tempered by stony minerality. Pleasant peaks of acidity burst between valleys of orchard fruit and long, wet grass. Delicate, fresh and pleasantly long on the finish.
PAIR: Drink these bubbles with homemade fettuccine tossed in a light butter sauce and finished with parsley and shaved black truffle. Or, if snacking is more your speed, have a splash alongside brioche toast with crème fraîche and salmon roe.
