Pinot meunier for the absolute win! To craft this complex and aromatic cuvée, Mathilde blends pinot meunier from the “Les Chapelleries” plot, planted in Cuchery in 1962, with more pinot meunier from a second plot called “La Loge des Vignes” in Baslieux-sous-Châtillon. “La Loge des Vignes” was planted in 2004 and 2007. With only 3 g/l of dosage, this is pure pinot meunier at its best — fresh and full of tension.

Growing up in a family of winemakers, surrounded by vineyards and a tradition of viticulture that dates back five generations, Mathilde Savoye knew from an early age that one day, she would make Champagne, too. Her father was reluctant to pass the family domaine to his daughter, so Mathilde decided she would break from the family estate and follow her dream of being a vigneron — all on her own. In 2017, after finishing her education, Mathilde started her domaine from scratch with 3.5 hectares of pinot meunier vineyards in Cuchery and Baslieux-sous-Chatillon.

From day one, Mathilde has worked in harmony with nature. She planted grasses, wildflowers and native herbs between the vines to promote healthy soils and to naturally manage pests. Rather than continuously tilling the soil, she disturbs it as little as possible. Grazing sheep keep the vegetation in check while their manure provides a natural fertilizer. She doesn’t use chemical treatments of any kind. Mathilde’s focus on biodiversity and sustainability earned her High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC) certifications.

Mathilde allows her small, highly concentrated pinot meunier grapes to ferment naturally, and in her cold, dark cellar, malolactic fermentation is blocked to preserve the wine’s bright acidity. She rests each of her cuvées on the lees for 27 months and finishes each bottle with low dosage. Mathilde’s unique approach results in dynamic, energetic, fruit-forward Champagne with amazing texture.

Select “pick up” during check out, and we’ll safely store your bubbles in our temperature-controlled cave until you can collect them. Once we notify you that your order is ready, pop by at your convenience to pick it up and enjoy a splash. Or, if you prefer, give us a call, and we’ll bring it to you curbside.

Our new compostable, insulated packaging keeps your Champagne safe from breakage and at a constant temperature from our cave to you. Even so, we monitor the weather where you are, and if we feel that extreme heat or cold may affect the quality of your bubbles, we’ll be in touch to offer you options.

  • Do you do tastings?

    Tasting room is open Monday-Thursday 10-6, Friday 10-7, Saturday 11-7, Sunday 11-6

    Tastings are free for members and $50 for non-members. (We’ll waive the fee with the purchase of a bottle.)

    No reservations required but please call ahead if you’re coming with a larger group.

  • Do I have to be a club member to shop bottles?

    No way José. All are welcome to purchase any of our delicious bubbles online or in person at the fatcork cave.

  • What do I do if my Champagne is corked?

    Damp, wet cardboard? That’s not on the tasting note! Cork taint is the worst, but all fatcork Champagnes use natural cork closures, so it does happen on the rare occasion. Please let us know, and will happily replace the bottle. Before you throw it away, snap a photo of the back label and we can refer to the code for reference. Email it to info@fatcork.com along with the order number.

  • Can I return or exchange my bottles?

    We aim to please. Call or email us, so we can talk about what happened and how we can make things right.
