Lydien No. 45 Blanc de Blancs Grand Cru Brut Nature

Stéphane Regnault

$128

This cuvée highlights the grapes of a specific historical plot (“lieu-dit” in French) named Le Chemin de Flavigny and is the fruitiest of Stéphane’s offerings. The vigneron ages the juice for eight months after fermenting 75 percent of it in a stainless steel tank and 25 percent of it in a used 228-liter Burgundy barrel. He then ages the wine for an additional three years sur lie before disgorgement. This plot is known for its light topsoil, compact chalk and natural grass cover.

See: Sensationally yellow with tiny beads that stick together in rows

Smell: Lemon, vanilla and citrus

Taste: White floral, muscat, honeysuckle and jasmine. Light and dry.

Pair: Bring on the comfort food. This Champagne’s bright acidity offers a beautiful contrast to fried chicken or calamari. It also pairs well with a triple-crème brie or lobster (or crab) with drawn butter.

Celebrate: Getting away for the weekend is great. Escaping the grind with a duffle filled with Champagne is better. Cheers to the well-deserved time off the clock and the few precious days of celebrations and new memories that lie ahead.

Village:
Le Mesnil-sur-Oger

Region: Côtes des Blancs

Vintage: 2016 base vintage with 2014 & 2015 perpetual réserve

Varietal: 100% chardonnay

Disgorgement: May 2022

Dosage: 1 g/l

Renaissance man Stéphane Regnault enjoyed careers as both an aerospace engineer and a sommelier before taking over the family land in 2007. He is the first in his family to make Champagne from the grapes grown on their 4 hectares of certified organic and biodynamic vineyards in Le Mesnil-sur-Oger on the Côtes des Blancs. A jazz musician at heart, Stéphane applies a kind of polyrhythmic method to his craft by creating his trio of plot-specific cuvées with a perpetual réserve from the previous vintage, beginning with his first in 2014.
