Les Rocheforts is French for 'the strong rocks.' In 2012, Etienne started a separate perpetual reserve just for this cuvee. This 1er cru single-vineyard in Bisseuil sits on pure chalk soils and creates a precise and beautifully expressive blanc de blancs, produced with 25% of reserve wine.

Smell: Pleasantly aromatic notes of warm brioche, clotted cream, fresh green apple.

Taste: Rich, silky and flavorful on the palate. To be more specific— frangipane, apple seed, lemon custard, and mmm vanilla.

Pair: Enjoy this cuvée throughout a long, leisurely meal. Begin with a simple green salad, move into your entrée of broiled monkfish, and slide into a fruit and custard tartlet for dessert.

Celebrate: After a long drive, you arrive at your Airbnb, and it’s even better than the pictures promised. First things first, you find a bucket under the sink, fill it with a bath of water and ice, and drop in your bottle of Champagne. Next, you’re into your sweatpants and pulling Yo-yo Ma’s Simply Baroque II off the shelf of host-curated vinyl. The ultimate weekend getaway has begun.

For years, the Calsac family sold the grapes they grew in their vineyards to the region’s grand Champagne houses. But, in 2010, 26-year-old Etienne Calsac inherited the vines and expanded the family business to incorporate Champagne-making from start to finish. Today, at his Avize estate, Etienne applies the strict quality control methods his grandparents taught him while also contributing his own spirit of experimentation during vinification. The vigneron’s expressive wines reflect distinctive terroir and showcase the elegance of the chardonnay grape.

Select “pick up” during check out, and we’ll safely store your bubbles in our temperature-controlled cave until you can collect them. Once we notify you that your order is ready, pop by at your convenience to pick it up and enjoy a splash. Or, if you prefer, give us a call, and we’ll bring it to you curbside.

Our new compostable, insulated packaging keeps your Champagne safe from breakage and at a constant temperature from our cave to you. Even so, we monitor the weather where you are, and if we feel that extreme heat or cold may affect the quality of your bubbles, we’ll be in touch to offer you options.

    Tastings are free for members and $50 for non-members. (We’ll waive the fee with the purchase of a bottle.)

    No reservations required but please call ahead if you’re coming with a larger group.

  • Do I have to be a club member to shop bottles?

    No way José. All are welcome to purchase any of our delicious bubbles online or in person at the fatcork cave.

  • What do I do if my Champagne is corked?

    Damp, wet cardboard? That’s not on the tasting note! Cork taint is the worst, but all fatcork Champagnes use natural cork closures, so it does happen on the rare occasion. Please let us know, and will happily replace the bottle. Before you throw it away, snap a photo of the back label and we can refer to the code for reference. Email it to info@fatcork.com along with the order number.

  • Can I return or exchange my bottles?

    We aim to please. Call or email us, so we can talk about what happened and how we can make things right.
