Le Flacon Céleste Blanc de Noirs Premier Cru Brut

Forget-Chauvet

$110

French for “Celestial Bottle,” Le Flacon Céleste pays homage to the Forget-Chauvet family vineyards that, blessed by Mother Nature, produce some of the Champagne region’s most exquisite grapes. Arthur and Ophélie make a limited quantity (2,000 to 3,000 bottles) of this cuvée with only the best vintages, and they riddle and label each bottle by hand.

See: Light gold with warm reflections. Limpid and brilliant in the glass with extremely fine mousse

Smell: Aromas of yellow fruits (apricot and peach) enhanced with vegetal and purple floral notes of anise and violet.

Taste: This expressive cuvée is fresh and unique as the year that produced the grapes. Firm yet delicate weight and structure. Exotic fruit notes of melon, and ripe grapefruit and deep flavors of toasted hazelnuts and parmesan rind. Precise acidity lifts your senses in the midpalate and remarkable balance guides you to the finish line — leaving a powerful yet delicate impression.

Pair: Pan seared duck breast with mushrooms and leeks is a dream pairing. A strawberry galette with a flaky buttery crust wouldn’t be too shabby either. But if just snacks are on the menu, warm popcorn with black truffle salt is the pro move.

Celebrate: It’s “Gotcha Day,” the anniversary of your pup Bruno’s adoption. You are so thankful for the joy he brings you and your family every day. Even when he chews your new shoes or takes up the whole bed, life is still better with your furry friend. A glass of bubbles for you. A pup cup for him.

The Forget name is a familiar sight in Ludes. Forgets have been tending vineyards in the Premier Cru village  for centuries, the oldest family vineyards dating back to before the French Revolution. In 1936, Pierre Forget, one of five Forget brothers, married Cécile Chauvet, and the pair began cultivating grapes on their own estate. Joined in the years that followed by their son Emile, the couple produced their Forget-Chauvet Champagne in 1950.

For more than 80 years, the family has passed along their methods and traditions, and, now, siblings Arthur and Ophélie Lelièvre are the sixth generation to lead Champagne Forget-Chauvet. With 10 hectares of vineyards spread across three terroirs in Ludes, Taissy and Lagery under their domaine, the young vignerons are eager to make their own mark on the family legacy. Today, Arthur and Ophélie choose to do all fermentation and aging in stainless steel tanks to impart their cuvées with a new fresh, vibrant quality.
