Literally "white from whites," as in white wine from white grapes. Of the three grapes used to make Champagne, chardonnay is the only white. So, a blanc de blancs is a Champagne made entirely of chardonnay. Chardonnay is widely regarded as the backbone of Champagne's elegance and finesse, and blanc de blancs typically prove that point in spades.
