Beaufort’s approach to caring for his vines is radical. He treats them like a living and breathing organism, allowing the vines to grow more freely and letting the grapes ripen much longer than more traditional growers. He even creates homeopathic sprays to treat his vines against mildew! In the early 70s, Jacques Beaufort fell ill as a result of eating fruit laden with pesticides. His wife encouraged him to try eating organic fruit which didn’t have the same negative affect on his health. And in 1972, he became the 2nd producer in Champagne to use 100% organic grapes. Since then, he has further converted his grapes to 100% biodynamic and he is a leader in the biodynamic movement in Champagne.
