Gimonnet-Oger Cuvée Blanc de Blancs Millesime 1996 Premier Cru
After resting peacefully in Jean-Luc Gimonnet's caves for almost two decades, several bottles are now resting in my basement for years to come. This is the 1996 to age, or to enjoy with a fall/winter meal. Very expressive and complex. Butter cookie, ginger, ripe pear, thyme, lemongrass, and honey. Energetic and tense, with bright acidity followed by melted effervescence. The finish is very long, ending on grapefruit, butter, and a strong chalky note. Serve in a large wine glass along some fresh oysters or lobster.
