Blanc de Noir

Literally "white from blacks," as in white wine made from black grapes. Note: no matter the grape skin's color, the juice is always white. Red skin, purple skin, blue skin, black skin: white juice. Of the three grapes used to make Champagne, pinot noir and pinot muenier are the two "black" grapes. So, a blanc de noirs is a Champagne made entirely of pinot noir and pinot meunier. Pinot noir is revered for the body, aromas, and texture it imparts on Champagne, and blanc de noirs can be expected to accompany hearty foods like winter stews with aplomb.
